It takes going to the Substack website in a browser, (not where I am now in the app), to manage subscriptions. Going to my account, then this subscription, there is a toggle for emails for both the letters & the podcast. I think I probably unsubscribed from within my email, because I wait for the podcast to show up in the app. So, you can probably shut if off both ways. I wait until later or the next day now, because I prefer the podcast. It's still plenty timely along with being thorough!
